Turns out that my fridge has "leveling legs", which were retracted all the way -- far enough to not make it clear from a purely visual inspection that they even exist. Well, now that I know that they do, I've extended them, and my fridge doesn't roll around anymore when you try to open the door. Yay for small victories! (I also found a folded-up cardboard bit underneath the fridge while I was down there. The previous owner's solution, methinks.)
